Ingredients
- 4 wholemeal flatbreads/pitta breads halved/sandwich thins halved (available in the bread aisle at most supermarkets)
- 80g grated cheese (cheddar or mozzarella)
- 4 teaspoons of tomato puree
- Optional other toppings - sweetcorn, olives, mushrooms, ham, peppers, onions, cherry tomatoes chopped (could use same toppings as for Omelette Muffin and buy at same time)
- Chopped herbs (dried or fresh)
Recipe
- Preheat oven to 180 degrees.
- Spread 1 teaspoon of tomato puree over one side of each flatbread.
- Chop up additional toppings so small chunks or slices.
- Sprinkle with grated cheese and then add any optional other toppings as suggested above.
- Sprinkle with dried herbs.
- Place on a baking tray and bake for 8-10 minutes in the oven.
- Leave to cool for 5 mins and then cut in half or quarters to serve.
- Can be served hot or cooled.
