Ingredients
- 4 eggs
 
- 60ml milk
 
- 1/2 teaspoon of baking powder
 
- 1/2 teaspoon of oil
 
- Salt and pepper to season
 
- Grated cheddar cheese
 
- Favourite omlette fillings:
 
- Spring onions, Peppers, Olives, Mushrooms, sweetcorn
 

Recipe
- Preheat oven to 190 degrees celcius.
 
- Chop filling ingredients into very small chunks/pieces (diced) and mix them up in a bowl.
 
- Grease a muffin tin (or you can use cake cases in a muffin tin).
 
- Put chopped ingredients into each muffin case to about half full and sprinkle grated cheese on top. 
 
- Mix egg, milk, baking powder, oil, salt and pepper in a bowl.
 
- Pour egg mixture in each muffin cup. You should fill to 3/5 of the way to the top.
 
- Put in oven and bake for 20-25 minutes.
 
- Take out of oven and let rest for 5 minutes before serving.
 
- Can be eaten warm or cold. 
 
- Great as a savoury snack or for lunch with salad and wholemeal pitta bread/toast.
 
- Children like the idea of a savoury muffin and great way to encourage them to eat eggs. And they can prepare it all themselves!
